Foods that compliment the energy of summer :
Stocking basic ingredients is the most essential thing to making your pantry and your kitchen accessible and inviting. It is important to balance the intake of the many seasonal vegetables that have heating properties such as tomatoes, hot peppers, radishes, beets, onions, garlic and spinach with cooling herbs and condiments. To balance the heat and humidity of summer, favor foods that taste predominantly sweet, bitter and astringent.

Produce:
asparagus, cucumber, fennel, celery, tender leafy greens, okra, sweet peas, new potatoes, zucchini and all varieties of summer squash and their blossoms, local tomatoes, corn and all varieties of summer beans, not only in the familiar green, but also shades of yellow and purple and speckled red and white cranberry beans.

Grains/legumes:
lighter grains such as cracked wheat and quinoa are well suited to summer heat as well as chickpeas and yellow mung beans

Alliums:
pale white and deep red scallions, leeks, sweet onions

Herbs:
this is wonderful time for fresh herbs of all kinds, but basil, garlic and onion chives, parsley, tarragon, mint and cilantro are especially suited for the summer.
